Vegan Coconut Gelato
I remember my first time eating gelato…it was at a huge, indoors Farmer’s Market and I had never even heard of the Italian ice-cream. It was perfect…it wasn’t as rich as ice-cream, but it was still so creamy. I loved the consistency, smooth and silky…almost like it was half mousse and half ice-cream.
I’ve wanted to recreate gelato for ages, but somehow I ended up forgetting. But a couple weeks ago, our family band was traveling home from a concert and we found a quaint little gelato shop inside a gas station. It had dozens of flavours which made me quite giddy. The nice Asian man was eager to please me so he let me taste three flavours, allowed me to have two flavours in my bowl instead of one, and ended up giving me the biggest size for the price of the smallest. That’s service! I tried egg nog and lemon… both which were scrummylicious.
So now, finally…I have tried to make my own vegan version of Gelato and it came out just perfect! I’m rather pleased with myself.
Vegan Coconut Gelato
- ¼ cup unsweetened almond milk*
- ½ cup light coconut milk
- 1 cup organic, original rice milk
- 1/2 cup organic sugar
- 1 tsp. vanilla
- 1 scant tsp. guar gum
- Pinch of sea salt
- 6 cubes ice
*I used this almond milk recipe
Blend all the ingredients. Put in your ice-cream maker according to the manufacturer’s instructions. Serve in little gelato bowls with small spoons. Garnish with a little toasted coconut. This serves 4.

So how was your Father’s Day? We had such a special day together…I love my Dad so much. He is such a superhero to me…he has such a sweet, understanding heart and I love him so much. He will do anything and sacrifices so much for his family.

Ah, I bet this is awesome! Anything with coconut milk tends to be amazing. I made a vegan coconut milk creme brulee back during the holiday season, which turned out surprisingly well. Love your paintings too!
Such a perfect cold treat for the blazing hot summer weather!
omg, this looks so good! And of course, since it’s vegan, it must be good for you!
I bet the taste of this gelato immediately transports your mind to a tropical island. So refreshing!
Such a beautiful photo :) This gelato looks delicious and so light. I am sure your dad enjoyed this a lot!
This looks wonderful! I’ve made ice cream with almond milk and have been thinking of making a coconut version. Thanks for the inspiration!
Tempting ice-cream photos! I’ve never tried making vegan gelato before, but coconut is a favourite flavour for me, so now I must try it :)
My favourite ice-cream so far was a coconut one I shared with my husband in Switzerland. I remember being tempted by a rose and turkish delight flavour as well, but thinking that for a tub of ice-cream that cost so much, I better stick to something I know I’ll love (ie. coconut). I wasn’t sorry!
i loveee love love coconut!!!
and gelato.
you’re gorgeous! :)
What a creamy looking vegan gelato! Will have to try this non-dairy treat!
This looks wonderful!
What’s a girl without an ice cream maker or a decent blender to do…. :(
Thanks all!
J~ Don’t worry, you can still make chop it up best you can in your blender (or even food processor), and then put it in the freezer with a spoon. Every 15 minutes (as it freezes) just give it a stir, until it’s the frozen consistency you want!
The recipe looks delicious! Can I sub xanthan gum for the guar gum?
Lorraine~ Give it a go! I think it should work, but you might have to play with a little. Just start with a tiny bit…
