Chicken and Rice Soup
As you all know, I typically don’t like hard, complicated recipes that take foreeeeever to make. That’s just not me. With every single recipe that I make I always have three qualifications in mind.
- Easy to make and takes little time
- Healthy
- Tasty!
I want my recipes to be simple so that every skill level can make them…or that children can help. And frankly, I just make the kind of recipes that I would go for myself. I figure that if I want quick, healthy recipes lots of other people might too.
Here’s my latest….Chicken and Rice Soup. I used to love the canned stuff so much, until I realized how much MSG and other nasty stuff was in it. It’s so easy to make your own and honestly, my version tastes way better than that old canned stuff. It’s low in calories, a good balance between carbs and protein, and is the perfect thing for a cozy, chilly day. I’m not really gravitating to all the “summer” recipes yet, because it’s still quite rainy and cold where I live, so I’m still digging the warm, comfort foods. This recipe serves 1.
Chicken and Rice Soup
- 1 1/3 cups water
- 2 tsp. organic chicken bouillon
- 1/3 cup cooked brown rice
- 1/8 cup cooked carrot
- 1/3 cup chopped chicken breast
Bring everything to a boil. Serve. Pair with a homemade, wheat roll and you have a lovely lunch. Couldn’t be simpler?

I love simple soups like this – I’m still making them even though it’s blazing hot down here in TN. Serve with a grilled cheese sandwich and it’s the perfect quick, satisfying dinner. :)
