Fluffy Meatball Rolls

There are a lot of people that stick to their “diet rules” or food lifestyle 24/7 hours a day and 7 days a week. I’m not that person. Especially on Thanksgiving or Christmas.

Flaky Meatball Rolls with Pillsbury

Personally, when it comes to celebrations, that’s what makes a holiday a “holiday”…you know, enjoying foods you don’t eat every day. Putting the green smoothies, coconut oil, and hempseeds on pause and indulging in carb-filled butter croissants, sugar filled cranberry sauce, and double servings of creamy mashed potatoes. Yes please!

For real though, I think it’s actually important NOT to eat perfectly all the time. Food is to nourish our bodies, yes…but it’s also for celebration, community, and frivolous and unabashed enjoyment. Does it do my body any favours? I don’t know, but since I always feel a little sick after feasting…probably not. However, let’s be honest, it’s probably because I stuff myself silly for the joy of holidays. No regrets.

So with that preamble, let me present to you an appetizer that is not low carb like my usual recipes, but is absolutely delicious (and high in protein!) – very worth splurging on. Before I made these, I picked up the Pillsbury™ Flaky Rolls at a Lethbridge Safeway and let my brain explore the possibilities. I like that there’s so much that you can do with the dough, it doesn’t have to be what the package says. Plus, it’s super easy to work with. I decided to make my Parmesan meatballs and cover them with Pillsbury dough, almost like mini hamburgers.

I ate these dipped in marinara sauce and it was delicious. A great appetizer (or side dish!) for all these holiday parties coming our way – a yummy appetizer to make some festive memories over! Makes 20 rolls.

Fluffy Meatball Rolls for a Holiday Appetizer

Fluffy Meatball Rolls

  1. 2 lbs lean ground beef
  2. 2 eggs
  3. 3 rice cakes, ground*
  4. 2/3 cup Parmesan
  5. 2 tsp. garlic, minced
  6. 1 tsp. parsley
  7. 1-1/2 tsp. sea salt
  8. 1 tsp. oregano
  9. 1 tsp. basil
  10. 1 tsp. onion powder
  11. 2 tubes Pillsbury Flaky Rolls

*I just stuck the rice cakes in a blender and ground them to a flour.

Mix everything together, except the dough. I just used my hands to make sure everything was mixed well (don’t forget to wash them!). Make balls out of the mixture (there will probably be a few extra meatballs that don’t get turned into a bun!), place on a parchment lined baking sheet, and bake at 350 degrees for about 20 min.

Let meatballs cool for about 10 minutes.

Open your 2 tubes of Pillsbury Flaky Roll dough.

Pillsbury Flaky Rolls Recipes

Each tube will come pre-sliced in 10 pieces each. Take each piece and place a meatball in the center. Pull up opposite sides and stick dough together (see picture below). This makes a “pillow” shaped bun.

How to make Pillow Shaped Buns

Brush the tops of the buns with a little oil (I just used a little fat that was lying on the just-baked meatball tray) and sprinkle some parsley on top.

Bake for about 15 minutes…perhaps a little more or less, depending on your oven. They’re best served warm. Enjoy!

    Soooo this totally looks like a German dish my grandma makes! Except hers is deep fried. Hehehehe. NOM! This is a way easier (and less oily) version. So creative!
