Red Pepper and Cottage Cheese Frittata
Picture this. You’ve had the worst night with your baby. Your mascara is half on your lashes and the rest has settled on the already dark bags under your eyes. The bed has never felt so soft and you never want to leave…but you know should make breakfast.
Then, like magic, someone has entered the room with a breakfast tray with your daily cuppa and probably this low carb frittata.
Well, I thought it was a nice narrative. I’m not a mother, so I based this story on my married sister’s life. The point is, it’s almost Mother’s Day and if you want to do something nice…you should probably make this for Sunday brunch.
It’s low carb, chock full of veggies, and by adding cottage cheese (and topping it with Mozza) it gives this frittata a creamy twist. Protein heaven. Serves 6.
Red Pepper and Cottage Cheese Frittata
- 1 tbsp. olive oil
- 6 organic eggs
- 1/2 cup egg whites
- 1/2 cup cottage cheese
- 1 red pepper, diced
- 2 large mushrooms, diced
- 1 cup spinach, diced
- 1/4 onion, diced
- 1 tsp. pure sea salt
- Pepper, to taste
- Mozzarella cheese
Preheat oven to 400 degrees.
Melt the olive oil (or butter) in a large cast iron skillet on the stove on medium heat.Dice your veggies and cook the onions and red pepper, until the onion is slightly translucent. Add mushrooms. Then finish up with spinach and heat until it looks slightly wilted.
Whisk the eggs, egg whites, cottage cheese, salt, and pepper together. Pour over the veggies.
Cook until the edges start to set (around 5-8 minutes). Place in the oven for 10-15 minutes until the frittata is cooked and puffy looking. Once baked, sprinkle on a little mozzerella cheese and place back in the oven for 1-2 minutes. Slice into 6 sections and serve hot.
I love this frittata with antipasto, but salsa would be great too!
The other day, I was looking at photos from our Cuba trip and found a few of my Mom and I. This woman is so beautiful in every way and I admire the way she loves her family so much.
