Low Carb Chocolate Ice-Cream
I have not slowed down since I made that blueberry ice-cream. Blame cravings, the sunshine, or my desire to make ALL the flavours, but I’m hooked.
The chocolate one I made with half the fat and half the calories as last time. It literally tastes like a fudgesicle in a bowl. I topped my chocolate ice-cream with these raw cacao nibs. Serves 4 (or 3 large servings).
Low Carb Chocolate Ice-Cream
- 1 cup almond milk
- 1/2 cup heavy whipping cream
- 1/2 cup cottage cheese
- 1/4 cup cocoa
- 1/8 cup chocolate stevia syrup
- 1 tsp. pure vanilla extract
Blend all the ingredients together until smooth. Add to ice-cream maker according to manufacturers instructions.
*You can use any stevia based sweetener, just add according to taste. I used this NuNaturals chocolate syrup.
