Low Carb Macaroons for Halloween
This is my first year in the city during Halloween (yes, former country girl), so this year I’m excited for all the kiddos who may come to the door. And no, I’m not handing out anything healthy. I really don’t think a few sugar binges in a year can hurt anything.
However, while I might have a few Reeses peanut butter cups, I’m pretty sure that these macaroons might make an appearance in my evening. As opposed to the sugar high that I’m guaranteed to experience with one-too-many M&Ms, these low carb (and sugar free!) macaroons are a great way to get that sweet fix! In honour of the ghastly, creepiness that is celebrated (and I still don’t know why – but whatever), I made these cookies to look like bloody monster eyeballs. Sort of. If I made these cookies look to lifelike, I’d be scared and wouldn’t eat them. Yields 2 dozen.
Low Carb Macaroons
- 4-1/2 cups coconut
- 1/3 cup Stevia in the Raw
- 1/3 cup sugar free maple syrup
- 1-2 teaspoons vanilla
- Sea salt, to taste
- 1/3 cup egg whites
- 1/3 cup coconut oil
- Strawberry jam
- Chocolate chips
Preheat your oven to 350 degrees F. Mix all the ingredients together, except jam and chocolate chips. Form small balls and place them on parchment paper and bake for 10 to 12 minutes, until the bottoms of the cookies are slightly browned. Let cool.
Thin out a few teaspoons of strawberry jam with a little water and drizzle on cookies to make the cookie “eye” look bloodshot. Top with 1 chocolate chip to make it look like an eye. Enjoy!
In theme with this, you could also make meatballs with “olive eyes” for another distressingly disturbing dinner idea.
