Swiss Oatmeal with Blueberries
Yesterday I felt sort of under the weather…it’s the kind of day where I want to just be anti-social, drink hot chocolate, and sketch. But it’s also the sort of day where lots is happening and I have loads to do, whether I ignore the fact or not. So because of the circumstances, I pampered myself at breakfast. A delightful pause before the flurries of activity. This I did with creamy, sweet Swiss Oatmeal. While I waited for my breaky to set (it takes about a half an hour), I munched on a small orange and some red grapes. Pre-breakfast.
Swiss Oatmeal with Blueberries
- 1/3 cup Greek yogurt
- 1/3 cup quick oats
- ¼ cup blueberries, mashed
- 1/8 cup organic rice milk
- 1 tbsp. chia seeds
- 1 tsp. agave nectar
- 1 packet Truvia (opt)
Mix and mash it all together and then stick it in the fridge for 30-45 minutes. Garnish with a couple blueberries and sliced almonds.
Today: I braved a 4 mile run on the treadmill today…I was wondering if I should. Maybe it was too early with my injury. I did it, but it was a hard run and I had to be very careful not to get out of breath. It seems that my injury involves bruised ribs or something similar, so there’s a lot of pressure on my chest. I’m under the impression that I shouldn’t of run, but I guess I’m feeling a little desperate to get some training in. I’ll try to take the rest of my day easy and head to bed earlier tonight.
I think this afternoon will have what yesterday did not have time for…some sketching. I’m working on a new oil painting project, but I need to get some more sketching done before I actually put some paint to canvas. I get kind of giddy when it comes to art projects. Me thinks I’ll be doing some apple snacking with caramel apple dip too…just saying. Should be fun.

That looks yummy indeed.
Hope you feel better.
I’m battling myself with being “okay” with eating grains and tons, tons more carbs…Its hard because I’m unable to exercise and I keep fighting that mental battle…but I’m willing just to jump into it and stop feeling the guilt.
I’ll be a grain-eating, bum sitting machine!
This looks so good and good for you!
I hope you are feeling better today! This looks like a great snack to help your body overcome whatever is bugging it though.
I love blueberries! What a great way to start out the morning.
Neverstopdreaming~ Aw, don’t feel guilty…carbs are big part of life…fruits and veggies are even carbs! I was thinking a lot about fitness when you can’t exercise and because my upper body is the part that’s injured, I can still do squats. It may be little, but it helps…if it’s your lower body that’s injured, you could maybe do boxing sitting down. That works!
JulieD~ Thanks girlie!
Clarkie~ Yes, it is. I’m glad I discovered it, lol.
Katie~ Have to agree…it was a perfect way to start the day!
