Chocolate Muffin in a Mug
Several months ago I started reading a book called “Trim Healthy Mama”. I was very impressed with their philosophy of food, wellness, and weight loss…it was extremely balanced, yet; refreshingly different than the other health/wellness books I’ve read in the past. Their viewpoints were similar to what I believed beforehand, but took everything to a whole new level.
Personally, I think low carb is a wonderful way to eat (especially for weight loss)…but I also believe we need carbs in our diet as well. So this book made me extremely happy as it showed how to make eating some carbs NOT a thing of weight gain, as well as the benefits of a more low-carb lifestyle. The book is scientific, but written in a way that makes it easy that’s not hard to understand. Actually, it’s written in a quirky, fun way with lots of illustrations and recipes…oh, the RECIPES! People they are amazingly good! I have every intention of trying them all out…and it’s a big book (around 650 pages!)…but honestly, every page is interesting.
I loved “Trim Healthy Mama” so much…there’s nothing “fad diet” about this. However, it does make you think about your carbs, fats, and proteins in a whole new way. It’s one book I feel I can completely recommend for the nutrition. It’d geared more to wives and mamas, but anyone can benefit from the nutrition and recipes in it.

Chocolate Muffin in a Mug
- 1 egg
- 1-1/2 tbsp. golden flax meal
- 1-1/2 tbsp. almond flour
- 1 tbsp. unsweetened cocoa powder (heaping)
- 2-3 packets Truvia
- 1/2 tsp. baking powder
- 1 tbsp. almond milk or water
- 1 tbsp. coconut oil
Crack the egg into a mug and whisk with a fork. Add the ingredients and stir well. Microwave for one minute. The muffin should come out of the mug easily when you turn it upside down. Enjoy with butter, peanut butter, or even some Greek yogurt.
This is one of my favourite snacks for the evening. It tastes like you’re eating a muffin made with flour, but it’s a low carb option that tastes like a dessert.
Sometimes I mix a little pure maple syrup with cocoa and drizzle it on top for a little extra sweetness.

Your photos are beautiful! We haven’t been as successful at getting our MIM’s to turn out with as nice of a texture, but I think we’ve been microwaving them a bit too long. Maybe our microwave is more powerful than the one used in the book?

I add in 1 TBS of canned Pumpkin to mine and cook for 1:20. It makes it so moist and yummy! Still an ‘S’ meal. Loving THM food!

I remember microwaving an egg once. DON’T DO IT. lol! The mug BLEW UP and the microwave exploded. lol!!!!!
I make my omelets in cup. I have had a great experience. One needs to monitor the egg in the microwave to make sure they do not explode. I have no heard about THM book but I now want to buy it. Thank you for enlightening us.

I used to make a recipe very similar to that one. Although I was once worried about eating too many carbs, I no longer stress about it. I think balance is a wonderful way to eat. Those mamas are spreading good message.
I’ve actually never heard of that book but it sounds like a good one. Nothing too crazy. And that mug recipe does look wonderful.
Has anyone made this in the oven and have the instructions to do it so? We are microwave-less on purpose and use over & toaster only.
Rachel – you can bake this at 350 for 10-15 minutes. Even a toaster oven works. A ramekin will work well for this…

…and I have a personal question. How did you get the recipe on a “index card”….what program or graphics did you use? I am converting all my recipes and would love to do this to upload to Pinterest for other THM’s to access! ;)

How much stevia extract would replace the Truvia?

Mary C – It would be around 1/2 tsp. stevia.
I tried the recipe with pyure brand stevia and it was awful. Supposedly it’s similar to the stevia truvia. I redid it with the cinnamon adaptation and the truvia. And it’s really yummy. I do still taste the metallic aftertaste after awhile that I dislike but its not as strong as the chocolate. Has anyone else had this happen? I’m really wanting this to work for me.
Anna – Truvia and NuNaturals are my favourite brands and so I stick with them…they don’t have that nasty aftertaste that some do. Hope your muffin turns out!
What would be substitutions for the almond meal, flax seed, and truvia and measurements? Thanks ツ
Serenity de Clare – Why not try replacing the same amount with coconut flour and use stevia instead of truvia? Maybe just use about a 1/16 of a tsp. of stevia…let me know how it goes!

I substituted the almond flour for coconut flour due to allergies, and used 2 packets of stevia…I think I will try 3 packets next time, as I like it a little sweeter, but it was good! Thank you for the recipe!
I have been going by the recipe in the book but when I sent a pin of your recipe to a friend I noticed you do not have the TBSP of water, (I have been using coffee), called for in the book. Would it make a difference in the final texture?
I just made these last night and they were a huge hit. Lovely chocolate / coconut flavor — earthy and not too sweet (per recipe). We put just a little whipped cream on top. I plan to make it again tonight. Easy, delicious and it looked fancy when I dropped it from the mug and turned it over. Highly recommend this for anyone wanting a yummy chocolate dessert while following a low carb diet.

I used 1 Tablespoon of xylitol instead of the Truvia and a small amount (teaspoon or two) of mini chocolate chips and it was yummy! I love the texture of this muffin! Everyone else around me can be eating regular cake and I don’t feel like I am missing out on anything.
Could you tell me exactly how many carbs are in the chocolate cake in a mug please? I am on a no carb diet for seven days and craving for a sweet fix.
Josie – I calculated it out and it’s about 3 net carbs.
I made this for the first time last night and I am hooked! You mentioned having some greek yogurt with it so I spread some 000 salted caramel greek yogurt over the top! WOW!! It was better than cake and ice cream! I couldn’t believe the texture, I felt like I was eating a luscious piece of chocolate cake and the salted caramel 000 was awesome with it! Thank you!!!

Hey i would like to make these banana flavored and would like to know how much banana flavored extract to use and all i have is stevia blend?
Beatric – Wonderful idea! I’d start slowly and see what 1/3 tsp. of extract would taste like! Stevia blend is fine – just test and taste. I can’t say how much is ideal for you as everyone likes varying degrees of sweetness.
I just read the THM book and I am trying to incorporate these meals to replace my current (horrible) eating habits. I am a bit overwhelmed; it is a lot to learn and keep track of! I found this recipe that sounds delicious and I was also wondering how you were able to get your recipes on the index card? I saw someone else had asked but I believe you had emailed them instructions and was just wondering if you would mind doing the same for me. I have been trying to find a way to keep my recipes organized since the cookbook is rather large and heavy to carry with me everywhere :) Thank you so much!
Lia – Unfortunately I don’t have a “print recipe” option on my site right now. It’s just a thing of having to copy and paste it at this point. Personally, I keep my online recipes on digital recipe books on Pinterest, but I understand how people like to have hard copies.
