EatMore Chocolate Bars
One of my Dad’s favourite chocolate bars is the EatMore bar, but what some people don’t realize is that you can make the exact same chocolate bar in your kitchen and it’ll taste almost exactly the same. My Daddy is obsessed with these.
As we’ve been traveling this past week, I’ve had more than my share of this chocolatey goodness. The cool thing about them is that they’re almost good for you. Instead of high fructose corn syrup, we use honey for that same chewy sweetness. We even added in golden flaxseed to up the fibre and slow the sugar (from the honey) absorption. However, this is optional if you want a smoother bar in between the crunch of peanuts.
This is a huge winner for a dessert or snack…and an easy way to become any child’s best friend. Seriously, they’re super delicious and highly addictive.
EatMore Chocolate Bars
- 1 cup honey
- 2 cups chocolate chips
- 1 cup golden flaxseed, ground
- 1-1/4 cup peanuts, chopped
- 1/2 cup organic peanut butter
- 1/2 cup sunflower seeds
On low heat, melt the honey and the chocolate chips together. Once boiled (make sure you’re constantly stirring it – you don’t want it to burn!), mix in the rest of the ingredients. Pour into a greased 10×13” pan. Score into bars before you place in the fridge. Chill until firm and then cut into bars.
Another option is to replace the flaxseed with wheat germ. Enjoy!

I’ve never had an EatMore Bar, but I can see why your dad likes them so much. I bet your recipe would be a hit in my household. They remind me of no-bake cookies.
