I don’t know about you, but I have a serious love for peanut butter. A serious love.

I put it in everything.

Yesterday morning I had it in my Favourite Oatmeal and all week long I’ve been having it in my chocolate protein shake. Oh, and on lots of rice cakes.

If you buy the natural peanut butter that is one to two ingredients (peanuts and/or salt!) it’s actually good for you. It’s healthy fat, some protein, and a boat load of amazing flavour. What’s not to love?

If you’ve been a reader of my blog for a while, you’ll know that I love low carb recipes. You’ll also know that I especially love low carb DESSERTS!

I try to keep my dessert recipes sugar free (mostly), so when NuNaturals sent me a bag of their newest sweetener I was beyond excited to try it. I had never heard of Tagatose before (a naturally-occurring sweetener found in milk, fruits and vegetables) and was so intrigued. Check out how amazing the nutrition info is (below).

Recently my love for peanut butter (and my curiosity to try Tagatose) drove me to make cookies. After the first bite, I’m thinking, “Oh my word. These taste so deliciously bad.” Don’t worry though, they are healthy and ridiculously simple to make. In fact, you probably won’t find an easier peanut butter cookie recipe. In addition to being a low carb recipe, it’s also dairy free, sugar free, and  gluten free. This recipe makes about 18 medium sized cookies.

Low Carb Peanut Butter Cookies

  1. 1 cup natural peanut butter
  2. 3/4 – 1 cup Tagatose*
  3. 1 organic egg
  4. 1 scant tsp. baking soda
  5. Pinch of sea salt

*You can use splenda as a sweetener if you want – I personally don’t recommend artificial sweeteners at all, but if that’s something you like using…it will work well in this recipe.

Preheat oven to 350 degrees. Grease a cookie sheet. Mix all the ingredients together really well. With your hands, make nice balls and place them on the sheet. With a fork, press down for a pretty peanut butter cookie look. Bake for 10 minutes, watching them very carefully. They will burn easy.

Let them cool for about 10 minutes (they’re just airy fluff when they come straight out of the oven, so try to restrain yourself till they’ve hardened a bit). Enjoy!

    Man, I love peanut butter cookies. I am interested in trying tagatose. It sounds like a great sugar free sweetener (try as I might, I can’t overcome my sweet tooth!).

    Interesting. Very interesting. I love NuNaturals, so this TAGATOSE is very intriguing to me… I have always loved peanut butter cookies but I cut peanut butter out of my life when I realized that I am an ALL OR NOTHING kind of girl, AKA: Eat the entire jar of peanut butter or none at all. LOL!

    Sue~ Honestly, sugar works fine…or if you want a low carb version splenda works well (I’m personally not a fan of artificial sweeteners), but it will turn out well! Try any natural granulated sweetener and let me know how it goes…

    And I had no idea they made liquid stevia. I need me some flavorings for my coffee!!
