Classic Baked Oatmeal
When I was growing up, I remember waking up to the warm scent of homemade baked oatmeal. On those cold, dark fall mornings there was just no breakfast that was cozier! It’s just the best autumn breakfast ever – it makes waking up early much less painless.
It’s also low calorie, low fat, and super nutritious! Thanks Mom for letting me share this family favourite with you all! It’s just too good not to pass around! It serves 16 so this is a perfect breakfast or brunch recipe to have when company is over.
Classic Baked Oatmeal
- 4 eggs, beaten
- 2 cups milk
- 1/2 cup olive oil
- 1/4 cup applesauce
- 1-1/2 cups brown sugar
- 4 teaspoons baking powder
- 2 teaspoons sea salt
- 6 cups quick oats
Stir the eggs, milk, oil, and applesauce together in a bowl. Set aside. Stir the sugar, baking powder, salt, and oatmeal together.
Add wet ingredients to the dry and gently stir just until mixed. Fill a lightly greased 9×13 pan with the oatmeal mixture.
Bake at 350F degrees for 30 minutes. Serve warm.
To save time, another alternative is to make the batter the night before. Pour in pan and refrigerate overnight. That way, when you get up in the morning you can just stick it in the oven while you get ready for the day. That way you can enjoy a hot breakfast – even when you’re in a hurry!

This came at the perfect time, I had to make something yummy for a family brunch. I substituted with almond milk and mixed in a pint of fresh raspberries before baking, and it turned out amazing!
