Superman Protein Pancake
I’m on this kick where I’m trying to have supergreens every day. I guess I have Sophie from Philosophie to thank for it. She sent me a package of her Green Dream superfood blend and I’m adding it to everything. Well, not quite everything.
However, I put it in my protein pancake the other day and it
turned out great. Sure, there was a little bit of that “green” taste, but I really liked it. I’d love it if I felt like drinking a big, green smoothie every day – but that’s not always the case, so to have my greens in my morning pancake was a fantastic alternative.
I felt like such a hardcore health freak at breakfast. It wasn’t just a pancake – it was a protein pancake, but not just a protein pancake – it’s a superfood GREEN protein pancake.
Sophie’s Green Dream superfood doesn’t taste as sharp or “green” as other ones I’ve tried, so I’m excited to try it in her Green Dream Muffins next. If you don’t have Sophie’s amazing greens blend, you can use a different green powder (it just might not taste as wonderful as mine – wink). Either way, you’re going to be loaded up with amazing superhero energy.
This recipe is embarrassingly simple, but I thought it was a fabulous and refreshing way to get your greens in!
Superman Protein Pancake
- 1/2 cup quick oats
- 1 organic egg
- 1 oz. Green Dream
- 1 heaping tbsp. Greek yogurt
- Stevia, to taste
Mix your ingredients in a bowl. Pour into a preheated non-stick pan on medium heat. Flip when cooked. Serve warm and enjoy!
I topped mine with Greek yogurt, pure maple syrup, and organic strawberries from our garden. So good.
(I love the earthy, rich flavour of maple syrup! Mmmm…)

I keep powdered greens on hand for when I’m low on the fresh stuff or for travel purposes. I’m actually a big fan of Amazing Grass Amazing Meal original flavor. It’s a good mix of greens, protein and other good for you stuff.

I’ve never used powdered greens, but that might be a great way to get more greens into my daughter who stopped eating green things. :) Your photo is gorgeous, I love the bright berries… and maple syrup, yum!
