Super Hydration Juice
I love this time of year. It’s still warm out, but it cools down quickly and the evenings get darker earlier. Cool, dark evenings are a wonderful time to catch up with the family, get some blogging done, and if there’s time, some reading. So cozy.
This season of the year is nice too, because this is when we start harvesting a lot of our garden. Lately we’ve been enjoying a lot of our organic goodies like squash, zucchini, onions, swiss chard, beets, carrots, peppers, tomatoes, and cucumbers. While all the vegetables are producing incredible yield (thanks to our square foot garden), I feel like we have cucumbers coming out of our ears right now! Which is great because I LOVE cucumbers!
We’ve been adding them to garden salads, slicing them for snacks, making giant cucumber salads, adding them to our water, and today – juicing them. I’m not sure I’ve ever juiced a cucumber, but since we had so many I thought it’d be fun to try.
Turns out, after a little research, I found out that cucumbers are more than amazing. They are a diuretic, which helps reduce water retention. Cucumbers contain an enzyme called erepsin which helps digest proteins and supports healthy kidneys. A lot of their nutrition is actually in their skin, which contains silicon and chlorophyll (which help with healthy hair, nails, and skin). Not only that, but cucumbers are ridiculously low in calories, very alkaline, high in energy, and extremely hydrating.
When you buy cucumbers you’ll notice that they are often very shiny. If they’re not organic, it’s a sign that they’ve been waxed, so you’ll want to peel them before eating – or else, just buy organic and skip the peeling and get all those extra nutrients!

Here’s a juice I had for lunch the other day, it’s so refreshing and was just the thing before I did a workout. Serves 2.
Super Hydration Juice
- 2-3 organic cucumbers, large
- 2 organic apples
- 1/4 organic beet or a handful of organic strawberries (opt)*
- Organic mint, to taste
*The beet I added just added a pretty colour – so this is totally optional!
Juice everything together in your juicer. Pour into two glasses with ice. Add a couple sprigs of mint for a garnish. Enjoy!
(I love using fresh mint – dried just can’t compare!)

I really need to get on the beet train. lol I love juicing, and my favorite involves carrots, strawberries, and apples. I’m a sweeter juicer. ;)

Brad~ We actually have a big garden, however it’s a square foot garden, so you it’s basically just a bunch of boxes. Square foot gardening is PERFECT for people with small spaces (here’s my post about it http://www.colourfulpalate.com/2011/07/16/square-foot-gardening/). You can just do one box of any size (you can even do it in one large flower box and you will get amazing yield!
I kick it old school. Orange Juice… so good. And it has to be super cold. Like ICE COLD. So cold that parts of it may still be frozen. That is how I roll.
Mint flowers??? My hubs mows it over before I get to see it grow that far!

This drink looks so beautiful I’d drink it for its appearance alone, lol. I bought a juicer a month or so ago and still haven’t used it. You just inspired me to give it a go.

Low in calories and yet high in energy???
A calorie is a unit of energy, could you please explain how the statement above makes sense….
Wayne – My point is that although it is low in calories, it still provides vitality required for physical or mental activity because of the nature of high quality foods. You can eat a small burger for 500 calories and not “feel” energetic…yet, you can eat a big fruit salad and yogurt for 300 calories and “feel” energetic afterwards…hopefully that makes sense for you!
