Lemon Meringue Pudding
I’m a lemon fan. I’m also a fan of getting protein in tasty ways. So when I had exactly one cup of tofu leftover from a previous recipe, I decided it was time to make something creamy. A lot of people aren’t interested in eating tofu and tease us innocents who happen to like it…but trust me, if you keep it a secret that there’s tofu in this pudding, I don’t think anyone will find out. This just serves one though, so make sure you double the recipe if you decide to share.
Lemon Meringue Pudding
- 1 cup firm tofu
- 1 ½ organic lemons, juiced
- 1 tbsp raw honey
- 1 tbsp almond milk
- 2 packets Truvia
Gather your ingredients.
Now whiz all of that goodness into submission with your blender. Pour into a dessert bowl.
This tastes lovely as is, but since we had it on hand, I added a whip recipe from the Biggest Loser’s newest cookbook, “Desserts”. I don’t have permission to post the recipe, but I recommend picking the book up if you can. I totally heart this book because all the recipes are completely healthy and taste amazing. Then I garnished it with organic lemon peel for prettiness sake.

i make lemon meringue icing for my cakes and that tastes very good which is why i am sure this pudding must taste spectacular!

Cakewhiz, even though I have a good camera I use Photoshop afterwards to edit my photos. Play with your editing program…I up the contrast, saturate colours, increase the black point, sharpen, and brighten my pictures. Hope that helps!
