Vegan Vanilla Pudding {& giveaway}

Hey guys! Hope my American readers had an awesome Thanksgiving! I’ve been enjoying all the tweets and blog posts from my blogger friends about what they’re thankful for. Such a great reminder of how blessed we are!
And I’m thankful for this…
Vanilla Pudding.
Why I love it? It’s creamy, very low calorie, practically fat-free, sugar-free, vegan, and it tastes fantastic! Normally I’m all about the chocolate desserts…but I decided I needed to be more creative. This serves 3.
Vegan Vanilla Pudding
- 3 cups cold almond milk*
- 3 tbsp. cornstarch
- 6 packets Truvia**
- 1 tbsp. pure vanilla extract
- Pinch of sea salt
*I used this almond milk recipe
**I used this so that it would be a sugar-free recipe, but you can use organic sugar instead.
In a pot on the stove, whisk the cold almond milk with the cornstarch till blended. Add the rest of the ingredients and heat until boiling (while stirring constantly). Once it’s boiling, it should start to thicken. Keep on heat until its thick. That’s it!
I like this best warm! Maybe with a dip of cool whip or a healthy version of whipped cream dolloped on top.
The texture is super creamy. I’m all about the cream.
Another way I enjoyed this recipe is to dip fruit in the pudding! It was absolutely delicious!

Oooh, that looks so good, especially the shot with the whisk over the pot full of pudding. Yum :D It doesn’t help that I’ve majorly been craving pudding lately.

Also, now that I’m done trying to get something out of you, I love this recipe. I have to try it.
I became a fan of vanilla yogurt a while back, but I have never really enjoyed pudding.
This is vegan, sugar free and low calorie. And SPRINKLES?! Yep. Eating it a lot.

Can you make this with coconut milk? If so, does it need to be canned coconut milk, or do you think SoDelicious Dairy free would work?
Linsey~ Yes, you can totally make this with coconut milk, canned or not. The SoDelicious Dairy Free will be a lot lighter than canned so it might work a little better. If you use canned, it’s possible you may need less cornstarch.
