On-the-Go Trail Mix
Today is the last day I’m home for a while. I’ll be gone for such a long time (two months!) on this trip, you can imagine the time I’m having packing. I never can decide what to pack, how much to bring, and always end up either over-packing or under-packing. No happy medium.
It was so much easier when my sister Liz was at home…she’s an organization freak. She used to come into my room when I was trying to pack, watch me agonizing over pathetically small decisions, and then she’d sweetly start to pack my suitcase! Seriously, that’s true niceness. Now she’s married and has kids and I have to pack all by my lonesome.
That’s okay. I’m doing better. In fact, this time, I even thought ahead and have packed a special snack bag just for me. I will be nice and share (maybe). I want to keep my diet really clean during this trip because when you’re on the road, food is so much harder to control. At least, I know that I’ve got some super healthy snacks to keep me sane when healthy food isn’t as available.
Enter trail mix.
Nuts, seeds, and dried fruit. It’s really as simple as that. It’s not science, just throw in all your favourites in a bowl, mix ‘em up and throw it in a baggie. Lots of protein, healthy fat, and nature’s sugar make this a great energy/protein snack! Go crazy. In my evil sugar loving heart, I love adding marshmallows and peanut M&Ms. I know you’re not shocked.
On-the-Go Trail Mix
- ½ cup raw almonds
- ½ cup Craisins
- 1/8 cup raw pumpkin seeds
- 1/8 cup raw sunflower seeds
- ¼ cup raw pecans
Just mix it up! Other great additions would be raw coconut flakes, dried apricot (one of my faves!), raisins, and of course…chocolate chips!
I didn’t put in chocolate chips this time, because I’m trying to stay off of chocolate for a while. I eat far too much of it and I’m trying to avoid sugar because right now I really can’t afford a cold. Me! Off chocolate!?? I know. It’s retarded.
Just a handful is the perfect snack! You don’t need much!
I took this recipe and portioned it into five baggies. It’s really easy for me to overdo the nuts, but if I separate it into small portion sizes I realize how much I’m eating. There’s five afternoon snacks right there!

I can’t believe that we’re leaving tomorrow, it seems so surreal! I’m excited, but I’m also sad to say goodbye to all my good friends and family here…two months seems like such a while when you leave people you care about at home. But I’m excited about the adventures God will be taking us on!

Ahhh almonds. I love almonds and I have a big jar of them at home waiting to be made into glazed almonds. But if I have any left… I know what I’m making! Looks great.

that’s some good looking trail mix! my favorite add ins would have to be walnuts or chocolate covered almonds :)
I like making my own trail mix too. The only problem with Craisins is that they have a lot of added sugar. I try to use dried fruits that don’t have any added sugar.
