Quinoa Chicken Summer Salad
I’m loving this summer salad! You might be sick of me and my quest for high protein recipes, but I’m just getting started…haha. I guess I’m just so happy about how much better I feel when I include a good dose of protein in my meals. And maybe because it seemed to help me shed a few extra pounds…that’s always a little bit of happy.
This is a lovely, light, fruit salad just perfect for a hot summer’s evening when you don’t feel like cooking too much. It’s creamy and sweet…great for an evening picnic or a pool party. I had it two days in a row…so delicious; it’s almost like a dessert and main dish in one! Thanks to the chicken and quinoa each serving has 18 grams of protein!
Quinoa Chicken Summer Salad
- ¾ cooked, organic quinoa
- ½ cup cooked chicken, diced
- 2 tbsp. low fat mayonnaise
- 1 orange, squeezed
- ¼ cup mandarin segments
- ¼ cup green grapes, halved
- 1/3 cup fresh pineapple, chopped
- ¼ cup toasted almonds
Combine all the ingredients, except the almonds. When ready to serve, gently toss in the toasted almonds. Serves 2.
Note: I like to double some of my recipes so that I have some extra meals ready for on the go. I can just toss a Tupperware into my bag as I’m leaving and I have my meal already! This saves me money and ensures that I will get something that’s actually nutritious. When I’m hungry, I’ll eat the first thing I see, so I try to always be prepared!

When I woke up yesterday morning I almost freaked out. I thought fall had come…it was cold and the air felt “different”. Then I noticed that some of our leaves are turning! I’m almost ready for autumn, but I’m not quite there yet! There’s a lot more volleyball to be played!!! Thankfully, the weather turned hot that afternoon and I’m feeling more “at peace” right now, haha. I love summer.
